Chicken Noodle Stir Fry


Quick and easy Chicken Noodle Stir fry thrown together perfect for any night of the week.



Prepping for this recipe may take a little time but its honestly worth it and cooking in a wok is always very quick, which is why I love this recipe all the more!


This recipe requires quite a few ingredients but not much time especially when you have a helping hand!


Ingredients:                                                                                              Serves:

Half a pack of Medium Egg Noodles (any noodles you prefer)            
Half a red pepper (thinly sliced)
Half a green pepper (thinly sliced)
1 small white onion (thinly sliced)
2/3 chicken breasts (thinly sliced)
Handful of frozen sweetcorn 
4 large Mushrooms (chopped)
Handful of Spring Onions (chopped)
Soya sauce 
Vegetable oil
Encona Thai sweet chilli sauce 
1 teaspoon pureed Ginger 
2 teaspoon pureed Garlic
Salt 
Black Pepper 
Chinese five spice (optional)
Red chilli flakes

Method:

  1. Prepare your chicken a few hours prior to cooking to achieve maximum flavour. To do so marinate your thinly sliced chicken in a generous sprinkle of Chinese five spice, salt, black pepper and a teaspoon of garlic. 
  2. Also, keep all your vegetables, spices and aromatics ready for when you begin to stir fry. 
  3. Heat up your wok with a splash of vegetable oil. Once its ready add your white onion and chicken and begin stir frying. Once the chicken is half cooked add a teaspoon of garlic and ginger. (Tip: If your chicken is cut thinly then it should cook very quickly as your wok is hot).
  4. When the chicken is cooked, add the peppers, mushrooms and red chilli flakes to taste. Once they are nearly cooked add the frozen sweetcorn. When your chicken and vegetables are done, season with soya sauce.
  5. Boil your preferred noodles in hot water whilst stir frying your chicken and vegetables, as soon as the noodles are done, drain the noodles and wash them thoroughly in cold water to ensure they don't stick together. 
  6. Add another splash of oil and the cooked noodles to the wok and thoroughly mix to ensure everything is incorporated well. At this point you can add more soya sauce/salt/black pepper/red chilli flakes depending on what you prefer. 
  7. Lastly add your chopped spring onions and lightly drizzle your noodles with the Thai sweet chilli sauce to add an extra kick to the noodles.
